Lightly Spiced Tomato Soup
About the recipe Tomato soup with some intrigue! I've always found tomato soup to be a little boring, but the subtle spices and good heat in this soup make it something i enjoy very much.

From the Sundays at Moosewood cookbook

Servings 4-6
Ingredients 1 cup finely chopped onions
1-2 Tbs vegetable oil
1 small chile, seeded and minced
1 tsp ground cumin
1/2 tsp turmeric
1/4 tsp ground cardamom
1/8 tsp ground cloves
6 cups tomato juice (one 46 ounce can)
1 cup water or vegetable stock
a few spoonfulls of plain yogurt (as garnish)
Perparation

In a small pot, saute the onion in oil until translucent. Add the chile and spices and saute another minute, stirring constantly. Add the tomato juice and water and simmer for about 20 minutes to blend the flavors.

Serve topped with a spoonful of yogurt and with poppadums on the side (good idea!)

Notes This soup also looks beautiful garnished with a couple mint leaves!
