Oatmeal Carrot Muffins for Kush
About the recipe This recipe is a synthesis of several others made specifically for Kush's birthday trip to San Antonio hot springs.
Servings 12 muffins
Ingredients 1/2 Cup Whole wheat flour
1/2 Cup White all purpose flour
3/4 Cup Oatmeal
1 Tbs Baking powder
2 tsp Cinnamon
1/2 tsp Nutmeg
1 tsp Salt
1/2 Cup Honey
1/4 Cup Butter
2 Eggs
1/2 tsp Vanilla extract
1 Cup Finely grated carrots
1/4 Cup Walnuts
1/4 Cup Raisins
Perparation

Mix all the dry ingredients together including the nuts. Carrots and rasins are not dry ingredients. Melt the butter and mix in with the honey. Next beat the eggs into the honey and butter with the vanilla. Mix in the grated carrots and rasins last.

Combine the wet and dry ingredients without stirring more than needed.

Bake at 350 for 20 min. (7000 ft) Naturally, the stick test works with these muffins just fine. Poke something like a toothpick into the muffins, when it comes out clean, they are done.
