About the recipe Actually a breakfast bread but there's not a category for breakfast or breads!
Servings 6 Large popovers
Ingredients 3 Eggs
1 Cup Milk
1 Cup Flour, sifted
2 T Butter
1/2 t Salt
Perparation

Heat oven to 425. Place large muffin pan in oven to preheat. Melt the butter in the microwave or on the stove top. Break eggs in a mixing bowl and beat with an electric mixer until foamy. Add milk and melted butter and beat. Gradually add flour and to the egg mixture, beating as you add. Remove the muffin tin from the oven and melt butter in each of the muffin cups. The batter needs alot of butter so that it can climb the walls of the cup. It works well to use a fork to hold the butter while you melt it in the cups. Fill each cup 1/2 to 2/3 full with batter. Bake for 15 minutes. Reduce heat to 375 and bake another 30 minutes. If you don't have large muffin tins, use smaller ones and make a dozen. Don't fill too full - they need room to climb. Serve with scrambled eggs.

Notes Jesse -These can be tricky to make - I haven't gotten to rise well since we moved to north dakota!

My cousin Rachel mentions that she preferrs them with fresh fruit. It seems to me then that they are like crepes in that they can be eaten savory or sweet. The possibilities are endless really...
