Ken's a great guy - a landscaper in the PT area. He certainly knows his way around food and I took a particular fancy to this simple, delicious salad he "threw" together. Kale and the Feta are the feature ingredients bathed in ginger and garlic. Thanks Ken.

Ingredients
A little ginger A little garlic Some feta Some kale
Perparation
When the garlic and ginger start to become golden, add kale and saute for about 5 minutes.
Toss in a bowl with crumbled feta.
I think it's important not to cook the kale too long. A lingering of freshness and crispness on the kale is quite nice.
