Ken's Kale Salad
About the recipe Ken's a great guy - a landscaper in the PT area. He certainly knows his way around food and I took a particular fancy to this simple, delicious salad he "threw" together. Kale and the Feta are the feature ingredients bathed in ginger and garlic. Thanks Ken.
Servings Make enough for all!
Ingredients A little ginger
A little garlic
Some feta
Some kale
Perparation

When the garlic and ginger start to become golden, add kale and saute for about 5 minutes.

Toss in a bowl with crumbled feta.

I think it's important not to cook the kale too long. A lingering of freshness and crispness on the kale is quite nice.
