Cranberry Mousse
About the recipe Mom and I made this for X-Giving 2008. It is adapted from a recipe in a 1983 Better Homes and Gardens "Holiday Cooking" magazine. We replaced the sugar with stevia powder and the orange marmalade with orange zest.
Servings 4
Ingredients 2 1/2 Cups Cranberries
2/3 Cups Water
1 1/2 Cups Whipping cream
Zest of 1/2 orange peel
1/8 tsp Stevia powder
Perparation

Simmer the Cranberries in the water for about 5 minutes.

Strain cooked cranberries into a mixing bowl. After adding the stevia and orange zest, mix well. Allow the this mixture to reach room temperature.

Whip the cream enough to create medium stiff peaks.

Fold the whipped cream into the cranberry mixture then keep refrigerated until serving. It can be frozen before being served, but because there is no sugar, the freezing point is higher and the mousse will freeze hard. The mousse needs an hour or so to thaw to a pleasing eating consistency.
