Pupusas
About the recipe This fun little corn-based pancake is appears to be the pride of the Salvadoran people. I learned about this food at a dinner with a wonderful Salavdoran couple that I happened to meet rather randomly in Corvallis, OR.
Servings About 9 Pupusas
Ingredients 2 Cups Corn flour (Maseca (tm) or Bobs Red-Mill Masa Harina)
enough water
1 Small Zucchini
1 Cup Grated Jack chese (or whatever you like)
Perparation

Grate the zucchini and cheese then mash to a gooey pastes with your hands (this is FUN!)

In a seperate bowl, add enough water to the corn flour to crate a dough that is about the consistency of cookie dough. It should be malleable enough to shape and not crack, but dry enough to not stick to the bowl.

Dip your fingertips in a small bowl of water. Pick up enough dough to make a 2" diameter ball with your hands. flatten it out into a disc about 1/2" thick.

Take about 1.5 Tbs of the zucchini/cheese filling and place into the middle of the disc. Fold the disc around and enclose the filling, sealing the edges. You'll have a somewhat half-moon shape now. Traditionally, this would be molded into a circular shape now, again, about 1/2" thick.

Fry this baby on medium-high until you get little brown/dark brown spots.

I ate pupusas with a homemade salsa, but I'd say throw whatever you want on it!

I'm excited because they are an easy little vessel for an infinity of stuffings! I made some sweet pupusas with shredded apple and honey! Ooh, I think bananna and nutela could be great!
