Pasta Dough
About the recipe This is a simple generic pasta dough recipie that came from my mother's illustrated pasta cook-book.
Servings a lot of pasta!
Ingredients 2 1/2 cups sifted flour
3 medium eggs
1 tsp salt
1 Tbs vegetable oil
Perparation

Make a pile of flour on a clean table-top and depress a well in the center.

Crack the eggs into the well.

Add the oil and salt with the eggs.

With fingers, mix the flour in with the eggs and mash together until uniform ball of dough.

Add enough flour or water to make a stiff, not quite sticky dough.

Let the ball of dough sit inside an overturned bowl for 1 hour.

Roll out dough until about the thickness of a butter knife blade. Or, use a pasta machine to thin the dough.

After rolled out, let dry for 10-15 minutes, until dough gets leather feel. (it's easy to work with this way)

Now make whatever type of past you wish to make...

If making any type of pasta that holds something, wet the dough seems before squishing together.

Notes I made this last for lasange, and it made enough for nearly two 9x12 dishes of lasagna.
