This is a chutney included as part of a recipe for something called "Patrani Machi" found in the Indian section of one of the moosewood cookbooks. It is an essential component to that fish dish, but also a delicious accompaniment to many dishes.

Ingredients
2 cups unsweetened shredded coconut 1 cup minced cilantro 3-6 cloves minced garlic 2 Tbs minced fresh ginger 3 tsp ground cumin 2-3 small chiles 1/4 cup fresh lime juice
Perparation
Combine all ingredients in bowl, mix well, and let sit for at least 30 min to let the flavors mingle. Ingredients may also be mixed in a food-processed for a smoother texture.
Notes
Very garlicy, and VERY addictive. If you love ginger and cilantro, you will practically wet yourself over this. If not, you might permanently disfigure your face from the cringe.
This is particularly good with breads and is a great topper for beans or lentils.
